MANGO PAYASAM

Mango give the best taste to this payasam

Ingredients

1tsp Basmati rice
½ cup Mango
1 ½ cup Milk
¼ cup Condensed milk
¼ tsp Cardamom powder
1 tsp Ghee
¼ cup Cashew nuts
2 pinches Saffron

Method

  1. Add the sliced mango in to a blender and blend into thick puree.
  2. Heat a pan with a ghee. Pour the mango puree and cook in low flame until it comes to boil.
  3. Add condensed milk and crushed cardamom to it. Mix well and boil.
  4. Switch off the flame, add milk.
  5. Mix well and add chopped nuts and saffron.
  6. Pour into serving glass and add mango pieces on top.
  7. Serve and enjoy the mango payasam.

UDUPI SAMPAR

Famous Udupi sampar, try it ounce

Ingredients

1 tsp Urad dal
¼ tsp Methi seeds
5 Dried red chili
2 tsp Oil
2 tsp Coriander seeds
½ tsp Cumin seeds
½ cup Desiccated coconut
¼ cup Water
¼ cup Drumstick 
1 large Potato - peeled and cubed
1 medium Onion
2 cups water
1 cup Tamarind juice
Few curry leaves
1 tsp Jaggery
¼ tsp Turmeric
Salt to taste
1 cup Cooked toor dal
¾ tsp Mustard seeds

Method

  1. First, heat oil and roast coriander seeds, cumin seeds, urad dal, methi seeds and dried red chili.
  2. Furthermore, transfer to a blender and add half cup of coconut and water, blend to smooth paste.
  3. Then in a large kadai add cubed potatoes, onion and add water.
  4. Simmer for 15 minutes.
  5. Furthermore, add tamarind juice, curry leaves, jaggery, turmeric and salt to taste.
  6. Mix well and boil for 5 minutes.
  7. Now add cooked dal and add prepared masala paste. mix well, cook 15 min
  8. Meanwhile, heat oil in small kadai and add mustard seeds, urad dal, dried red chilli and curry leaves.
  9. Allow the tempering to splutter then pour over prepared sambar.
  10. Finally, udupi sambar is ready to serve with plain rice, dosa or idli.

RAW BANANA FRY

Ingredients

¼ tsp Turmeric
1½ tsp Sambar powder
¼ tsp Pepper
½ tsp Salt
2 tbsp Oil
1 tsp Mustard
½ tsp Urad dal
½ tsp Cumin

 

Method

  1. Peel the raw banana and cut them into discs.
  2. Heat a heavy bottomed pan, and then add oil, cumin, mustard, curry leaves.
  3. Add asafetida, then the urad daal and fry until it turns golden brown. Add the cut banana discs, salt and continue to fry.
  4. Add the masala powder and sprinkle of water in between, and fry.
  5. Once in a while add oil also as it makes it crispy and tasty.
  6. When it is done, Garnish with fried curry leaves.
  7. Finally, serve raw banana fry with hot steamed rice.
