OVER NIGHT OATS

Creamy, smooth texture with just the right amount of chew

Ingredients

1/2 cup Rolled oats
1 cup Almond milk
¼ cup Yogurt
1 tbsp Maple syrup
1 tbsp Chia seeds
2 tabs Nuts

Method

  1. In a mason jar, add rolled oats, almond milk, yogurt, maple syrup, and chia seeds.
  2. Stir until well combined then cover and refrigerate overnight.
  3. Leave in the refrigerator or overnight.
  4. If you’d like, you also can microwave the jar for about 40 to 60 seconds before serve.
  5. Add your favorite toppings fruit or nut and enjoy.

BREAD UPMA

Indian simple bread recipe for breakfast

Ingredients

6 slices Bread
3 tsp Oil
½ tsp Mustard seeds
Few Curry leaves
½ medium Onion (finely chopped)
1 Green chilli (chopped)
½ tsp Ginger paste
½ tsp Garlic paste
2 medium Tomatoes (finely chopped)
½ tsp Turmeric
1 tsp Kashmiri red chili powder
Salt to taste
½ small Capsicum (finely chopped)
2 tabs Water (if required)
1 tabs Ghee
3 tabs Coriander leaves

Method

  1. Cut the bread slices into bite size squares. Slice the onion, slit green chillies and chop tomato.
  2. Heat a pan with oil and add mustard seeds and curry leaves.
  3. Saute till the mustard seeds to splutter.
  4. Add onions and green chilli, fry onions till transparent and add the ginger garlic paste and fry for 30 secs. 
  5. Add tomatoes, salt and fry till tomatoes turn soft.
  6. Sprinkle turmeric and chili powder and stir well. Sprinkle some water. 
  7. Add the bread pieces and mix well.
  8. Add ghee, keep in low flame and cook for two minutes to see golden brown spots here and there in the bread pieces. 
  9. Finally, serve bread upma garnished with coriander leaves.

BANANA MUFFINS

Soft and flavourful banana muffins

Ingredients

1 1/2 cups All-purpose flour
1 tsp Baking powder
½ tsp Baking soda
1/2 tsp Salt
Bananas large
3/4 cup White sugar
Egg
¼ cup Nuts
1 tsp Vanilla extract
tabs Butter melted

Method

  1. Preheat the oven to 350°F (177°C).
  2. Line 12-cup muffin pan with paper liners and lightly spray with non-stick spray.
  3. In a large bowl, mash the bananas with a fork or wooden spoon.
  4. Add sugar, melted butter, egg and vanilla extract, and mix everything until combined.
  5. Then add flour, baking soda and salt, nuts. Mix to combine.
  6. Divide the batter evenly into the prepared muffin cups.
  7. Bake for 20-25 minutes, or until the inserted toothpick comes out clean.
  8. Cool completely before serving.

AVACADO SMOOTHIE

Rich in antioxidants and full of healthy fats

Ingredients

½ Avocado, pitted and peeled
Pinch of Ground Cinnamon
1 cup Almond milk 
1 tabs Honey or Maple syrup 
1 tabs chopped Nuts
Handful of ice

Method

  1. Add the avocado flesh, the milk, and honey to a blender and blend until smooth and creamy.
  2. Garnish with chopped almonds and cashews.
  3. Add the ice and serve chilled.
