POPCORN CHICKEN

Crispy Popcorn Chicken

 

Popcorn Chicken is my all-time favorite menu item from KFC which has a crunchy outside and soft juicy chicken inside. Let’s see how to make this delicious KFC popcorn Chicken.

Prep Time: 10mins

Cook Time: 15 mins

Serves: 04

REQUIRED INGREDIENTS

250g Boneless chicken

1cup Curd

2Eggs

1inch Ginger

2Garlic

1small piece Onion

1tsp Chili powder

1/4 tsp Pepper

1.5 tsp Salt

Coating

1cup Maida

1/2cup Corn flour

1tsp chili powder

1/2tsp Coriander powder

1/2tsp Cumin powder

1/2tsp Pepper

1tsp Salt

METHOD

  1. Into a blender add ginger, garlic, 1/8 of an onion, water and grind well. Filter it and set it aside.
  2. Into a mixing bowl add curd, eggs, then add the ginger-garlic-onion water from step 1, chili powder, salt, pepper and mix well.
  3. Now add in the boneless chicken cubes and mix well. Refrigerate the chicken it from minimun 2-10 hrs.
  4. In a separate bowl combine maida, corn flour, chili powder, cumin powder, coriander powder, pepper and salt.
  5. Now take a chicken piece and dip it in the flour mixture and again in the wet mixture (which we used to marinate the chicken) and then dip in the flour and keep it aside.
  6. Fry the chicken pieces on hot oil until golden and crisp on all the sides.
  7. That's it our delicious Popcorn chicken is ready to be enjoyed.

 

PEPPER CHICKEN

Spicy Pepper Chicken

Pepper Chicken is made using whole spices for tempering along with freshly roasted, grind spice mix.

Prep Time: 10mins

Cook Time: 30 mins

Serves: 04

REQUIRED INGREDIENTS

750g Chicken (with bone)

1 Onion

1Tomato

1.5tbsp Pepper powder

2 bay leaves

1 Cinnamon stick

4 Cloves

4 Cardamom

3 Red chilies

1/2 tsp turmeric powder

2 tsp chili powder

2 tsp Coriander powder

2 tbsp  Oil

Required salt

Curry leaves for garnishing

METHOD

  1. Heat some oil and add mustard seeds, cinnamon sticks, Cardamom, cloves ,bay leaves, 3 red chilies to temper and the add 1 chopped onion, salt and saute until the onions are golden brown be careful do not burn the onions (it will taste bitter).
  2. Once the onions are golden add 1 tbsp of ginger garlic paste and saute for a couple of minutes.
  3. For the masalas add turmeric powder, Chili powder and coriander powder and mix it well and
  4. Add 1 chopped tomato (you can also continue without adding tomatoes, instead add 1 tsp of lemon juice to it) and then the cleaned chicken pieces and mix it well with the masalas, cover and cook for 8- 10 minutes until the chicken is 100% cooked.
  5. Once the chicken is well done add pepper powder mix it well and also add some curry leaves for garnishing and turn off the heat.

CHICKEN BREAD ROLL

Chicken Bread Roll

Chicken Bread roll is a Crispy and a delicious recipe which is very easy to make. It has a crispy bread layer on the outside and the inner stuffing is made with a special chicken stuffing. You can serve this with ketchup or coriander chutney.

Cook Time: 20 mins

Serves: 06

REQUIRED INGREDIENTS

2tbsp Oil

1/2tsp Cumin seeds

1 Onion

1tsp Ginger Garlic Paste

1 Green Chili

1/4tsp Turmeric Powder

1/2tsp Garam Masala powder

2tsp Chili powder

250g Boneless Chicken

Salt to taste

Coriander leaves

10-12 Bread slices

Water for sealing

Oil for frying

METHOD

  1. In a pan heat oil, once the oil is hot add cumin seeds then add one chopped onion, some salt and saute it for a few seconds.
  2. Then add the masalas ginger garlic paste, green chilies, Turmeric powder, Garam Masala, chili powder and give it a quick stir.
  3. Take boneless chicken pieces and chop them finely or we can also mince the chicken in a blender.
  4. Add it to the onion masala mixture and cook for 5- 7 minutes or until the chicken is cooked.
  5. Finally add some chopped coriander leaves and turn off the heat. Chicken should be dry without any moisture.
  6. Take a slice of bread and trim the edges, roll it flat with a rolling pin. Now take some chicken stuffing and roll it.
  7. Apply some water around the edges and press it firmly to form a tight seal. Make sure there are no openings.
  8. Heat oil in a pan and drop the bread rolls. Oil should be on medium-high. Once all the sides are golden and crispy take it off from the heat and is ready to be served.
  9. That's is our delicious Chicken Bread roll is ready.
