ANDHRA PRAWN FRY
Ingredients
500g Prawn, cleaned and deveinedSalt to taste
1 tbsp Red chilli powder
½ tsp Turmeric powder
1 tbsp Coriander seeds powder
1 tbsp Ginger garlic paste
1 cup Oil
7-8 Curry leaves
1 tbsp Coriander leaves for garnishing
Method
- Wash the prawns thoroughly and pat them dry.
- Marinate the prawns with some salt and red chilli powder and let sit for some time.
- In a pan heat oil, add cumin seeds, curry leaves, and chopped onions. Stir until soft.
- Add all the dry spices red chili powder, coriander powder, garam masala and salt according to taste. Mix well.
- Add prawns and mix well. Cover and cook until the gravy has dried out.
- Garnish with freshly chopped coriander and curry leaves. Serve hot with roti or rice.
CHILLI CRAB
Ingredients
2 Sea crabs½ cup Onion
5 Chillis
3 tsp Ketchup
2 tabs Cooking oil
1 tsp Salt
Water as required
½ tabs Cornstarch
5 cloves Garlic
1 Ginger
2 tabs White sugar
1 tabs Chilli sauce
1 Egg
Method
- Heat oil in a skillet over medium-high heat.
- Sauté the garlic, ginger, and shallots.
- Add the crabs and 1 cup of water then cover and let it cook for 5 minutes or until the crab's shells turn red all around.
- Add the tomato ketchup, chili sauce.
- Stir well making sure that the crabs get covered with the sauces. Cook for another two minutes.
- Move the crab pieces on one side of the skillet and pour the cornstarch mixture into the sauce and mix until the sauce thickens.
- Lastly, add the beaten egg into the sauce and stir quickly to prevent it from making lumps.
- Cover the crabs with the sauce and cook for another minute.
Maasi Masala
Ingredients
1 cup Maasi / Pounded dry fish½ cup Onions, chopped finely
2 tbsp Grated coconut
1 tbsp Red chilli powder
Salt for taste
1 tbsp Lemon juice
Method
- Mix coconut and masi together. Set aside.
- Heat oil in a pan, add garlic and curry leaves.
- Add in onion and cook that for a min.
- Add the masi and coconut mix. Saute this on low heat for 10 mins or so, till the mix gets crispy.
- Add salt to taste.
- Now take it off the heat and add lemon juice. Mix well.
- Serve with rice, appam or idiyappam.
