ANDHRA PRAWN FRY

Authentic Andhra style prawn fry

Ingredients

500g Prawn, cleaned and deveined
Salt to taste
1 tbsp Red chilli powder
½ tsp Turmeric powder
1 tbsp Coriander seeds powder
1 tbsp Ginger garlic paste 
1 cup Oil
7-8 Curry leaves
1 tbsp Coriander leaves for garnishing

 

Method

  1. Wash the prawns thoroughly and pat them dry.
  2. Marinate the prawns with some salt and red chilli powder and let sit for some time.
  3. In a pan heat oil, add cumin seeds, curry leaves, and chopped onions. Stir until soft.
  4. Add all the dry spices red chili powder, coriander powder, garam masala and salt according to taste. Mix well.
  5. Add prawns and mix well. Cover and cook until the gravy has dried out.
  6. Garnish with freshly chopped coriander and curry leaves. Serve hot with roti or rice.

CHILLI CRAB

Singapore style special dish

Ingredients

2 Sea crabs
½ cup Onion
5 Chillis
3 tsp Ketchup
2 tabs Cooking oil
1 tsp Salt
Water as required
½ tabs Cornstarch
5 cloves Garlic
1 Ginger
2 tabs White sugar
1 tabs Chilli sauce
1 Egg

 

Method

  1. Heat oil in a skillet over medium-high heat.
  2. Sauté the garlic, ginger, and shallots.
  3. Add the crabs and 1 cup of water then cover and let it cook for 5 minutes or until the crab's shells turn red all around.
  4. Add the tomato ketchup, chili sauce.
  5. Stir well making sure that the crabs get covered with the sauces. Cook for another two minutes.
  6. Move the crab pieces on one side of the skillet and pour the cornstarch mixture into the sauce and mix until the sauce thickens.
  7. Lastly, add the beaten egg into the sauce and stir quickly to prevent it from making lumps.
  8. Cover the crabs with the sauce and cook for another minute.

Maasi Masala

Spicy and crispy dry fish

Ingredients

1 cup Maasi / Pounded dry fish
½ cup Onions, chopped finely
2 tbsp Grated coconut
1 tbsp Red chilli powder
Salt for taste
1 tbsp Lemon juice

 

Method

  1. Mix coconut and masi together. Set aside.
  2. Heat oil in a pan, add garlic and curry leaves.
  3. Add in onion and cook that for a min.
  4. Add the masi and coconut mix. Saute this on low heat for 10 mins or so, till the mix gets crispy.
  5. Add salt to taste.
  6. Now take it off the heat and add lemon juice. Mix well.
  7. Serve with rice, appam or idiyappam.
