BAKED MOZZARELLA DIP

The Best Hot Mozzarella Cheese Dip

Prep Time: 10 mins

Cook Time: 20 mins

Servings- 8

Ingredients:

2 cups Shredded cheddar cheese

1/4 tsp Dried thyme

1 cup Sour cream

1/2 tsp Mustard powder

1 cup Basil leaves, chopped

2 cup Mozzarella cheese, coarsely grated

Method:

  1. Heat oven to 350 degrees F.
  2. Mix all of the ingredients together until well blended.
  3. Pour into an 8x8 inch baking dish. Baked for 25-30 minutes until the cheese has melted and is bubbling.
  4. Serve with crackers.

CHICKEN SATAY

Perfectly grilled and nicely charred chicken skewers

Prep Time: 40 mins

Cook Time: 30 mins

Servings- 3

Ingredients:

4 – 6 Boneless skinless chicken thighs

1/2 cup Coconut milk

1/4 cup Soy sauce

1/4 cup Brown sugar

1 tabs Minced ginger

3 Garlic cloves chopped

1 tabs Turmeric

1 tsp Curry powder

Juice of one lime

1/4 tsp Salt

1/4 tsp Pepper

1 tabs oil

Method:

  1. In a bowl, combine coconut milk, soy sauce, curry powder, turmeric, garlic, ginger, brown sugar and, chicken.
  2. Refrigerate for at least 1 hour or overnight.
  3. Drain the chicken from the marinade.
  4. Preheat grill to medium high heat. Thread chicken onto skewers. Brush with oil.
  5. Season with salt and pepper, to taste.
  6. Add skewers to grill, and cook, until the chicken is completely cooked through, 165 degrees F, about 12-15 minutes.
  7. Serve immediately with peanut sauce.

 

JAM SHORTBREADS COOKIES

Everyone falls in love with these shortbread cookies

Prep Time: 15 mins

Cook Time: 20 mins

Servings- 5

Ingredients:

100 g Unsalted butter softened

40 g Powdered sugar

1 Egg white

1 tsp Vanilla extract

1/4 tsp Salt

150 g All-purpose flour

1 cup Jam 

Method:

  1. Preheat oven to 425F.
  2. In a medium bowl whisk together, the flour and the baking powder
  3. In a large bowl of a standing mixer or use a hand mixer, beat the butter and the sugar until very light and creamy.
  4. Next add the egg white, vanilla extract, salt and mix well.
  5. Finally, add the flour and mix well.
  6. Line a large baking sheet with parchment paper.
  7. Immediately shape the dough using a small cookie scoop into little balls, place on the baking tray leaving a few centimeters in between and make an indentation in each with your finger. 
  8. Fill the centers with a little bit of jam.
  9. Bake for 15-20 mins and let them cool on the baking tray for a few minutes before moving to a wire rack.
  10. Let it cool and enjoy!
