Crafting the Perfect Modak

Ingredients

1 cup rice flour

1.25 cups water

A pinch of salt

1 tsp ghee (clarified butter)

 

For the filling

1 cup grated coconut

1 cup jaggery (or to taste)

1/2 tsp cardamom powder

1/4 tsp nutmeg powder

2 tbsp chopped cashews and almonds

 

Preparing the Filling:

  1. In a pan, combine the grated coconut and jaggery.
  2. Cook on low heat, stirring continuously, until the jaggery melts and combines with the coconut.
  3. Add the cardamom and nutmeg powder, along with the chopped nuts. Cook for a few more minutes until well combined. Set aside to cool.

Making the Dough:

  1. Boil water with a pinch of salt and ghee in a heavy-bottomed pan.
  2. Once it starts boiling, reduce the heat and slowly add the rice flour while continuously stirring to avoid lumps.
  3. Cook the mixture on low heat for a few minutes until it forms a smooth, pliable dough. Let it cool slightly.

Shaping the Modaks:

  1. Apply some ghee on your palms to prevent sticking. Take a small portion of the dough and flatten it into a disc shape.
  2. Place a spoonful of the prepared filling in the center of the disc.
  3. Gently bring the edges of the disc together to form pleats, sealing the filling within.

Steaming the Modaks:

  1. Grease a steaming plate or tray and place the modaks on it.
  2. Steam them in a steamer for about 10-12 minutes until they become translucent and cooked.
