MINI PUMPKIN PANCAKES

REQUIRED INGREDIENTS
- 1 ¼ cups Self-raising flour
- 1–2 tbsp brown sugar
- 2 tsp baking powder
- ¼ tsp salt
- 1 tsp pumpkin pie spice
- 1 cup milk
- ½ cup pumpkin puree
- 1 large egg
- 2 tbsp butter, melted
- Maple syrup, for serving
TO MAKE PUMPKIN PIE SPICE
- 4 tsp ground cinnamon
- 2 tsp ground ginger
- 1 tsp ground cloves
- ½ tsp ground nutmeg
PREPARATION METHOD
In a large bowl, combine the flour, sugar, baking powder, salt, and pumpkin pie spice, then stir to combine.
Using a separate large bowl, combine the milk, pumpkin puree, egg, and butter, then whisk to combine.
Afterwards, just add the dry ingredients to the wet ingredients and whisk them together until the combination looks ready.
Place a large greased skillet on the stove and pour 1 to 2 tablespoons of batter to make small pancakes and leave on medium heat.
Cook the pancakes for 3 minutes until the pancake batter starts to bubble, then flip them over until both sides take on a light golden brown.
Remove the pancakes from the skillet.
Serve warm with maple syrup.
