SIMPLE RICE RECIPE

Flavourful rice made with freshly grated coconut

Ingredients

1/4 cup Desiccated coconut, unsweetened
2 cups Jasmine rice
1 cup Coconut milk
1 tsp Mustard seeds
1 tsp Cumin seeds
1 cup Water
1 tsp Salt
2 tabs Nuts
Green chilli, chopped
Few Curry leaves

 

Method

  1. Boil the rice with salt in a deep pan over medium flame and drain the excess water when it is cooked.
  2. Add oil and salt to the cooked rice, mix well and keep aside.
  3. Heat a pan with oil, once it is hot enough add mustard seeds, cumin seeds and saute for few seconds.
  4. Now add green chilli and cashew nut. Saute for few minutes until they change their colour slightly.
  5. Next add curry leaves and fry for few seconds and add the grated coconut and sauté on low - medium flame until you get a nice aroma or change their colour lightly.
  6. Now add cooked rice and mix well until it is nicely combined with the coconut mixture. Add salt as per your taste and mix well again.
  7. Finally, add chopped curry leaves and switch off the flame and serve hot!
