SIMPLE RICE RECIPE
Ingredients
1/4 cup Desiccated coconut, unsweetened
2 cups Jasmine rice
1 cup Coconut milk
1 tsp Mustard seeds
1 tsp Cumin seeds
1 cup Water
1 tsp Salt
2 tabs Nuts
Green chilli, chopped
Few Curry leaves
Method
- Boil the rice with salt in a deep pan over medium flame and drain the excess water when it is cooked.
- Add oil and salt to the cooked rice, mix well and keep aside.
- Heat a pan with oil, once it is hot enough add mustard seeds, cumin seeds and saute for few seconds.
- Now add green chilli and cashew nut. Saute for few minutes until they change their colour slightly.
- Next add curry leaves and fry for few seconds and add the grated coconut and sauté on low - medium flame until you get a nice aroma or change their colour lightly.
- Now add cooked rice and mix well until it is nicely combined with the coconut mixture. Add salt as per your taste and mix well again.
- Finally, add chopped curry leaves and switch off the flame and serve hot!
