SRI LANKAN KOTTHU AT HOME
Street food - you either love it or you hate it, but you wouldn’t be here if you hated it would you? The fabled tale of the Kotthu begins on the small island of Sri Lanka when the Sri Lankan Tamil Community decided that Kotthu Roti, also known "Kottu" or "Kotthu" would surely taste amazing with a whole bunch of ingredients, and thus, Kotthu was born.
Sri Lankan Spicy Chicken Kotthu is a delicious combination of Chopped Rotti, Fresh vegetables, Eggs & Chicken with added Cheese to make it the ultimate hunger buster.
The word “Kotthu" translates to "to chop" in Tamil so the name of this delicacy is derived from how the dish is cooked up, or in this case, chopped up.
SPICY CHICKEN KOTTHU RECIPE
- Prep time - 20 minutes
- Cook time- 10 to 15 minutes
- Serves - 2 to 4 Adults
REQUIRED INGREDIENTS
- 2 tbsp vegetable oil
- ½ medium onion
- 1 tbsp garlic, minced
- 1 tbsp ginger, minced
- 6 large jalapenos, halved and sliced
- 1 cup leeks, sliced
- ¼ of a cabbage
- ½ tsp cayenne pepper
- 2 heaped cups of shredded chicken or leftover chicken curry
- ½ cup curry spices as below
- 1 cup carrots, grated
- 3 eggs
- 1 cup cheddar cheese, grated
- A pinch of salt to taste
- 1 lb chopped godhamba Rotti or plain paratha
CURRY & SPICES FOR THE KOTTHU
- 1 tbsp Sri Lankan curry powder
- ⅓ cup chicken stock
- ¼ tsp black pepper
- ½ tsp cayenne pepper for a spicy version
- ½ tsp ground cinnamon
PREPARATION METHOD
In a large non-stick pan, heat the vegetable oil over medium-high heat.
Add the onion and sauté until softened. Add the ginger, garlic and sauté for a few seconds.
Add all the vegetables (except for the carrots) and a pinch of salt and stir-fry for a few minutes.
Add the chicken, cayenne pepper and the curry sauce and stir-fry until the vegetables are just softened.
Note: If you don't have leftover curry sauce, then add the ingredients for the curry spices given in the recipe.
Add the carrots and mix them in.
Whisk the eggs together in a bowl and add a pinch of salt.
When the eggs are almost cooked, you can mix it with the vegetables and chicken.
Add the cheddar cheese and mix.
Add the shredded roti and mix through with the vegetables and chicken until coated with all the spices and curry sauce. Cook for about 5 minutes, constantly tossing and mixing.
Serve while hot!
