1/2 kg ground chicken

½ cup regular or panko-style bread crumbs (plain or Italian-flavor)
METHOD
- Mash together the chicken, sweet potato, salt, and onion powder in a medium bowl with a potato masher or a large fork.
- Place the bread crumbs into a separate shallow bowl.
- Form the chicken mixture into 1-tablespoon-size balls and roll in bread crumbs.
- Flatten slightly (or form into tot-shapes) and place on a parchment-lined baking sheet. Optional: Spray or brush lightly with olive oil.
- Bake for 22-24 minutes at 375 degrees F or until golden brown on the bottom and cooked through.
- Remove from oven, let cool for a minute or two and serve warm.

REQUIRED INGREDIENTS
1/2 cup carrots, roughly chopped
1/2 cup parsley leaves, lightly packed
1 small onion, peeled and halved
1/2 cup Italian-flavored bread crumbs
1/2 kg ground beef
1 egg
2 tbsp milk
1/2 tsp salt
1/2 cup grated Parmesan
METHOD
- Preheat the oven to 375 degrees F and line a rimmed baking sheet with foil. Coat with nonstick spray.
- Place the carrots, parsley, and onion into a food processor.
- Grind well, stopping to scrape down the sides of the bowl as needed.
- Add the remaining ingredients and grind to combine into a smooth mixture.
- Portion into 2-tablespoon-size meatballs and place on the prepared baking sheet.
- Bake for 22-25 minutes or until cooked through.
- Serve with warm marinara sauce and pasta (or ketchup and other simple sides!) as desired.
HOMEMADE BROCCOLI TOTS

Prep Time: 10 mins
Cook Time: 25 mins

REQUIRED INGREDIENTS
1 cup broccoli florets (roughly chopped)
1 cup fully cooked short grain brown rice
½ cup shredded mozzarella cheese
1 tbsp grated Parmesan
2 eggs
¼ cup Italian-flavored or regular breadcrumbs
1/4 tsp salt (optional)
1/4 tsp Italian seasoning or cumin (optional)
METHOD
- Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
- Bring a kettle of water to a boil and pour over the broccoli in a heat-safe bowl.
- Let sit for about 5 minutes. Drain well.
- Add the broccoli, rice, cheese, Parmesan, eggs, and breadcrumbs to the bowl of a food processor.
- Add salt and either Italian seasoning or cumin to add a little additional flavor if desired.
- Grind very well to make a uniform batter. (If your batter doesn’t seem to be holding together well, add another tablespoon or two of breadcrumbs.)
- Portion into 1-tablespoon size ovals and place on the prepared baking sheet.
- Bake for 25-27 minutes or until firm to the touch and lightly golden brown. (Or cook in an Air Fryer at 375 degrees F for 10-12 minutes on a greased tray.)
- Let cool slightly and serve.
