BASUNDI RECIPE
Basundi Sweet Recipe is a very delicious Indian dessert made with milk, nuts and sugar, it is quite simple and easy to make. It is made by slowly evaporating the milk and reducing it to 1/4 of its volume. The added nuts gives nice taste and each spoon filled with nuts makes the recipe more interesting. Saffron gives nice color and lovely aroma to Basundi.

REQUIRED INGREDIENTS
2L Full Fat Milk (4 cups approximately)
1/4Cup Sugar (you can increase by 2tbsp)
2tbsp Chopped Pistachios
2tbsp Chopped Almonds
2tbsp Chopped Cashew nuts
2tbsp Cashew nut Powder
15strands Saffron
1/4tsp Cardamom powder
METHOD
- Heat Milk in a nonstick pan and allow it to boil. Once the milk comes to boil turn down the heat to low and let it simmer for 10 -15 minutes or until the milk reduces half in volume.
- Once the milk reduces to half add the chopped nuts and the cashew powder (Cashew powder adds extra base and it thickens the basundi and really adds nice awesome taste.)
- Mix well and add sugar( Do not add all the sugar at once because once the milk thickens and reduces in volume you will find it too sweet , so for 4 cups of milk 1/4 cup of sugar will be sufficient. Taste it at the end and if needed add more at the end).
- Gather the Milk solids settled at the sides of the pan and drop it into the milk and mix well. Do this very often because the milk solids gives that richness to the basundi.
- Scrape the edges very often. Once the milk is almost thickened add Saffron strands and cardamom powder (you can skip cardamom if you don't like the flavor) and cook until milk thickens and reduces to 1/4.
- That's it our delicious Diwali sweet Basundi is ready, chill it in the refrigerator before serving and enjoy. You can sprinkle some nuts on the top before serving.
SOMAS RECIPE
Somas is a traditional recipe of Tamil Nadu distributed during festivals especially during Diwali. Let’s make this festive season special by making delicious Somas.

REQUIRED INGREDIENTS
For the dough
1cup Maida (125 g)
2tbsp Rava
1pinch Salt
1tbsp Ghee
6tbsp Water or as required
For the Poornam / Stuffing
1/4cup Roasted Channa dal
1tsp Ghee
1/4cup Cashews
1/2cup Grated Coconut
1/2cup Sugar
3 Cardamom
METHOD
- In a mixing bowl add maida, salt, Rava and ghee. Mix well then gradually add water to make a stiff dough. Knead the dough for a minimum of 10 - 12 minutes, kneading softens the dough. Cover and keep it aside.
- Roast the channa dal (pottu kadalai) in a pan for 2 -3 minutes over medium heat. Transfer it to a blender and grind it coarsely.
- Now in the same pan melt ghee and then add cashews, grated coconut and roast until the moisture from the coconut is gone.
- Powder sugar along with cardamom and add all the ingredients - coconut + powdered channa dal + Sugar in a bowl and mix well.
- Take a portion of dough and roll it thin, then grease the somas mold with oil and place the rolled sheet and then place the poornam and seal it tight with the help of water.
- Fry the somas in oil over medium heat until the bubbles settles down and golden. Do not fry on very hot oil.
