RECIPES MAKING WITH SUGARCANE!
SUGARCANE KHEER
Ingredients
4 cups Sugarcane juice1 cup rice cooked
½ tsp cardamom powder
¼ cup raisins
¼ cup cashew
1 tsp ghee
salt
Method
- Mix sugarcane juice and rice together and bring to a boil.
- Reduce the heat and simmer for 10 minutes or so till the sugarcane juice is slightly thick and syrupy.
- Add cardamom powder to it.
- Heat ghee and fry raisins and cashews till slightly brown. (Avoid this step of frying in case you want to make it vegan).
- Add to kheer, add a sprinkle of black salt and stir well.
- Keep in the refrigerator and served chilled. Traditionally it was kept in mud pots immersed in water to cool.
SUGARCANE REFRESHING JUICE
Ingredients
1 cup Sugarcane juice2 tabs Jaggery
¼ cup Fresh mint leaves
1 tsp Cumin powder
1 tsp Salt
1 tabs Lemon juice
2 cup Ice cubes
1 cup Cold water
Method
- Combine jaggery, mint leaves, cumin powder, salt, lemon juice, ice cubes, and water in a blender.
- Blend it all together to make juice.
- Taste and add more jaggery or salt if required.
- Serve sugarcane juice chilled.
