IT’S WORLD OCEAN DAY- LET’S TRY SOME SCRUMPTIOUS FOOD!
World Ocean Day is an important day to raise awareness about how to utilize and protect marine resources in a responsible way. When we talk about oceans and their protection it have been and are still the key to lead a healthy lifestyle.
Why not celebrate this important time of the year with some scrumptious dishes. It might seem unusual to talk about food, but in fact our oceans are unique and is the only place which is able to protect the environment and at the same time feed millions of people.
Let’s begin to cook these scrumptious dishes to celebrate this fantastic day with your loved ones.
CRAB MAC “N” CHEESE BAKE RECIPE
A delicious and yummy dish to enjoy for dinner and other special occasions.
Prep Time: 15 mins
Cook Time: 40 mins
Serves: 06 – 08
REQUIRED INGREDIENTS
100g, Butter, plus extra for greasing
500g, Macaroni
100g, Flour
1l, Milk
200g, Cheddar cheese (grated)
1 tbsp, Mustard
1 tbsp, Tomato ketchup
1 tsp, Cayenne pepper or Tabasco sauce
150g, Fresh crabmeat
For the crab topping
150g, Crabmeat
100g, Fresh cream
½, Lemon (juiced)
½ small pack dill, finely chopped
METHOD
Heat oven to 200C/180C fan/gas 6 and grease a medium baking dish. Cook the macaroni.
Meanwhile, melt the butter in a thick-bottomed pan and add the flour to make a thick paste, stirring frequently with a wooden spoon. Add the milk, little by little, to the paste, mixing until smooth. Cook over a medium heat, stirring continuously until the mixture thickens.
Remove from the heat, add 150g cheese and whisk until smooth. Mix in the mustard, ketchup and cayenne. Drain the macaroni and return to the pan. Stir the cheese sauce into the cooked pasta, fold in the crabmeat and season.
Spoon the mixture into the prepared baking dish. Sprinkle the remaining 50g cheese on top and bake in the oven for 25-30 mins until heated through. Remove from the oven and stand for 10 mins.
Meanwhile, in a small bowl, combine all the ingredients for the crab topping with some seasoning. Serve a big spoonful on top of each portion of the bake.
STIR-FRY PRAWNS WITH PEPPERS & SPINACH RECIPE
A great side to enjoy with ghee rice, jeera rice, flatbreads and other main courses.
Prep Time: 05 mins
Cook Time: 10 mins
Serves: 02
REQUIRED INGREDIENTS
3 tbsp, Sunflower oil
2 fat, Garlic cloves (sliced thinly)
1 small, Red pepper (cored, deseeded and thinly sliced)
200g pack, Raw peeled tiger prawn (defrosted and dried)
2 tbsp, Soy sauce
100g bag, Baby spinach leaves
METHOD
Heat a wok until you can feel a good heat rising. Add 2 tbsp oil and, a few secs later, the garlic slices. Stir-fry until they start to turn golden.
Toss in the pepper and stir-fry for 1 min or so until softened, then scoop out and set aside. Add the remaining tbsp oil. Heat, then toss in the prawns and stir-fry for another 2-3 mins until cooked and beginning to brown. Add the soy sauce.
Throw in the spinach and stir-fry until it begins to wilt. Return the peppers and crisp garlic to the wok, then serve immediately.
